I remember well when the FIRST Cajun restaurant opened in the Houston Galleria area in the mid-‘70s…Don’s, and it was a big hit, thanks to the many oil & gas people who traveled often to Louisiana, and loved the food. Now, Houston joins a few other areas outside of the New Orleans French Quarter to boast an Acme’s Oyster House. Reports are that several days during the opening period Acme ran out of oysters due to the heavy demand. Bravo! When a restaurant runs out of something, that is a GOOD thing, signifying freshness.
